Frugale Tabitha. Risotto.
I introduced Frugale Tabitha in Friday's post. The goal here is to (hopefully) add some very wholesome meals to our menu plans that are inexpensive and easy! I always felt intimidated by risotto. Then I tasted this! Oh my goodness it is one of the best things ever! So here we go:
Notes: There is a reason the stock must be warm/hot. So this is important!
A guide to the amount of stock is it will be 1.5 to 2 litres.
If you don't have homemade stock that is ok... a heaped tablespoon of tassel stock powder to the 1.5 litres of hot water or whatever you normally would use as stock.
If you make your own stock you can really add a huge amount of nutrition to this meal for almost no cost. I made turkey stock a couple of weeks ago and it literally was liquid gold!
Serve with shaved parmesan or stir in little chunks of parmesan to melt.
The veggies disappear into the rice. I think kids who are hard to get veggies into would eat a ton of them this way without even knowing. 😊
Now at last I am confident with Risotto thanks to Frugale Tabitha. I can't wait to share the next recipe which is also so nutritious and versatile.
Once you make this you won't be able to stop making it.
And left overs re heat perfectly.

Could you use other types of rice. We enjoy basmati rice and buy it in big 20 pound bags.
