Frugale Tabitha. Risotto.
I introduced Frugale Tabitha in Friday's post. The goal here is to (hopefully) add some very wholesome meals to our menu plans that are inexpensive and easy! I always felt intimidated by risotto. Then I tasted this! Oh my goodness it is one of the best things ever! So here we go:
Notes: There is a reason the stock must be warm/hot. So this is important!
A guide to the amount of stock is it will be 1.5 to 2 litres.
If you don't have homemade stock that is ok... a heaped tablespoon of tassel stock powder to the 1.5 litres of hot water or whatever you normally would use as stock.
If you make your own stock you can really add a huge amount of nutrition to this meal for almost no cost. I made turkey stock a couple of weeks ago and it literally was liquid gold!
Serve with shaved parmesan or stir in little chunks of parmesan to melt.
The veggies disappear into the rice. I think kids who are hard to get veggies into would eat a ton of them this way without even knowing. π
Now at last I am confident with Risotto thanks to Frugale Tabitha. I can't wait to share the next recipe which is also so nutritious and versatile.
Once you make this you won't be able to stop making it.
And left overs re heat perfectly.
I hope this helps you and is a money stretcher for your family.xxx
Oh, how this post brings back memories of making mushroom risotto. Thank you for that and oh, I should restart making it. Yours sounds delicious with the veggies.
ReplyDeleteThank you so much for this, and for all your encouragement! I have a hard time finding things that my adult autistic son will like and this sounds like it will do- also, I can add some vegtables.
ReplyDeleteI've been a bit intimidated too by risotto but this looks easier and another great use it up veggie meal. Thank you!

Could you use other types of rice. We enjoy basmati rice and buy it in big 20 pound bags.

Nope. Arborio rice is a short grain that plumps up to a creamy consistency. From memory basmati is long grain and has a different starch profile. I do recommend arborio. Its pretty reasonable at aldi.
DeleteThank you for sharing. It looks easy and delicious π❤️ From Cheryl
ReplyDeleteThank you sharing another of your wonderful recipes with us.
ReplyDeleteThankyou Annabel and Tabitha, this is really helpful to me. I am not a natural cook and I find the whole process of providing meals for my family challenging. I appreciate the time you are taking to teach this in steps. I have also always been intimidated by risotto but will give this a try. Love Clare
ReplyDeleteThank you so much, Annabel. I have never made risotto but with your helpful instructions it looks easy.

Thank you! Seems a very uncomplicated meal. Add to that lots of benefits: tasty, healthy, not expensive, suitable for reheating, easy to cook double (or the amount you like) portions, (and only one pan for the washing up). ππ
ReplyDeleteWhat a beautiful recipe! I definitely will try it. Thank you for making it clear and simple so we can give it a go. Love, Bridget
ReplyDeleteThank you also, Tabitha
