Back to Basics. Anzac biscuits by Fiona.

In Australia it is Anzac Day on Thursday.  Anzac Day is a day of remembrance in Australia and New Zealand, commemorating all who served and died in wars/conflicts and peace keeping.   We remember them.   All year but especially at this time Anzac biscuits are an absolute Aussie classic.

Golden Syrup is a pantry staple here.  If you are overseas and don't know of it, you should find it in the British section of a supermarket.

So, today i made Anzac biscuits. They are a bit of an Aussie staple….. yesterday i saw a pack of 10 biscuits “on sale” from a large grocery store bakery…… and i saw families buying them up….. these are super easy and quick to make, use things usually in a pantry and travel well, so great with a cuppa or in school lunchboxes. The ingredients cost a fraction of the store price and they are not hard to make.

Step 1: turn on the oven to 160 degrees c
Step 2: measure out 125 g butter, 2 tablespoons water and the 2 tablespoons golden syrup into small saucepan. 






Step 3: pop that on the stove over low heat to melt the butter mix together. While that is happening, measure out 1 cup of plain flour, 1 cup rolled oats, 2/3 cup of coconut, and 2/3 cup brown sugar.

 




Step 4: give the dry ingredients a mix up, then once the butter mix is melted, add 1/2 teaspoon of bicarb soda to the butter mix. It will froth. 






Give it a quick stir and it should all be frothy.





Step 5: mix the butter mix into the dry ingredients and mix well.






Step 6: place spoonfuls onto cookie sheet and bake about 10 min. Baking longer will make them harder and crunchy (my mums favourite!) whereas shorter makes them chewy which i prefer! I generally get them out when they are just browning slightly on the edge….






Allow to cool before putting them away in a container.

    1. Mum used to make them crunchy but dad and i used to leave the lid off the container until they were chewy. Mum was mad!

  5. Beautiful, I made some last night too. I made the ones from David Gillespie's sweet poison (No fructose) cookbook, the same basic recipe but instead of golden syrup, rice malt syrup and instead of sugar, dextrose (found in beer making aisle). More expensive, but cheaper than buying a sugar free version. They're not quite as crisp either.

  7. Could I use a different syrup instead of golden syrup since it’s such a small amount? I’m in the U.S. and haven’t ever seen golden syrup.

    1. Not sure. It is much thicker than maple syrup …. Sort of the consistency of molasses but lighter in colour.

  8. Light treacle for our USA readers . Lovely with a cup of tea or coffee dunked in. Yum ! I have also seen tins "on sale" but even they are close to $9.. ! My mum always made these growing up for Anzac Day. It was the first time yesterday I didn't go to the traditional dawn service in memory of my dear grandparents who met in the army at 18 and were married 72 years. For all who served, or currently serving we honour you. Sonia
