You might want to get a cup of tea. It was a long week! We had every season in the week too! A huge storm came through. Lightening came first and two things happened at once. Molly took off. Chloe and Lucy saw lightening strike then a plume of smoke came up! A fire had started. Luke headed off to the fire station and everyone leapt into action. Then the rain came down. It was pouring! So the fire didn't last long. A wind storm hit and later we learned we had been on the edge of a mini tornado that left a strip of destruction.
Then we tried to find Molly. Hours went by. I was starting to get really worried she had gone out on to the road. I drove around again, shouting her name over and over. Finally I drove further, down past the cattle yards and called. Molly appeared from underneath the loading ramp. That is a little space that trucks back up to for loading. She was soaking wet. She would not get into the car! So I said Molly go home, come on... and I began to head back to the house. She ran flat out and beat me to the front veranda. So then we had a reunion party and carry on and now we know at the first sign of a storm we need to get the dogs contained before she takes off again!
Today, by contrast, it was pretty warm. Tom was here and we went and picked tomatoes and they were so hot on the vine! I made a big bowl of rice salad so that I can have the weekend off and serve cold meat and sides. This is a favourite family salad. I love a salad that keeps a few days. In fact, it is better the next day... This is a very flexible recipe.
I cook a cup of rice... (you can do much more I just like less rice and more other ingredients.) Chop one or two onions and throw into a big bowl. Then add your cooked rice. Now throw in... one or two tins of drained tined corn, a couple of chopped capsicums, a tin or two of pineapple pieces (drained) , a handful of cashews, some sultanas, chopped celery is really good but I didn't have any so left it out.
Now add a cup of so of French Dressing and a spoon of curry powder. I tend to stir this in and put it in the fridge and stir it a few times. Then as the day goes on I taste it... if it's bland add some more. If it's right it will taste delicious!! It is so fresh and cooling. This is a crow pleaser, good with a BBQ. I gave half to Chloe for their weekend. The picture is before I gave it a big stir... the curry gives it a slightly yellow colour. You could chop spring onions, parsley, many variations. Use what you have! I am picking capsicums so they were on hand and so fresh and bright.
I was given a box of apricots.
They needed using right away. I got them into the sink and washed up.
These came with a box of peaches! These also needed to be used quickly.... but they were really good.
I was also given giant lemons!
The number one thing to do with fresh produce is to eat it! Work the menu plan around it. Nothing is as healthy as fresh produce. We lived on apricots and peaches and those that were going to get away from me were stewed and made into jam. Chloe had both peaches and apricots too. Tom ate five apricots in a row to her amazement!
Then I lived on stewed fruit and froze some. I made apricot jam and peach jam.
Mum was coming so I made a nice batch of scones.
Now we had fresh jam and fresh scones!
In turn, Mum made me chocolate cakes with icing and jelly! They were amazing!
Andy gave me three beautiful presents...
Also a Mouli and seed starting kits.
Chloe made me a beautiful cheesecake. With all these deserts I have cut up and frozen a supply of treats!
Yes, it was my birthday, to explain all of these lovely gifts!
I picked basil and made up some Pesto. Chloe and Luke do not eat nuts so I made a batch that left the nuts out. Pesto is another very versatile recipe!
I start with peeling a heap of garlic cloves... I used 8. Usually I would lightly roast a tray of blanched almonds... add those, parmesan cheese, as much basil as you can stuff into the blender... or as much as you have... drizzle with olive oil and blitz. Keep adding oil and mixing until it is like a thick dip consistency. That is it. You can use cashews, pine nuts... or you can leave out the nuts. It will be beautiful!
My garden needed a big tidy up. This all went to the chickens yesterday...
On Tuesday I went to town and the thrift stores. I came home with an absolute treasure trove of kids clothes. For the Aust ladies... I had ten Country Road items including a coat and a dress and Seed tops. I have it all washed up... some put away in my chest of drawers where I save things for the kids. Others are given to be worn right away like these PJ's for Tom.
Chase got some gorgeous summer shorts, also with dinosaurs.
I found beautiful little jars with wooden spoons. I think with drying herbs and making mixes these could help give me some nice gifts.
I also buy kids classic books when I see them and this time I got Huckleberry Finn and Tom Sawyer for 50c each.
Our security cameras catch some funny and lovely things...
The rain water tanks were filled.
I will stand and watch the water run in!
My goal for the week was to get my new sewing machine up and running. I had to watch a video even to figure out how to thread it and fill the bobbin! But when I started sewing I realised I have been driving an old bomb and now I am driving a Rolls Royce! I started with the simple job of hemming some panels I had to make tea towels.
So far so good. My next goal is to sew something with scalloped edges.
Tom has taken a shine to Doris. Tom passes me the apples and Doris is the first cow to the window. Tom thinks it would be a good idea if Doris goes to live at his house. He worked out the details, Dad could bring the trailer over and load her up and drive her home where he would feed her more apples. 😊
I suggested maybe Doris could have a baby then we might have two cows equally fabulous. He seems to be thinking about it. I bet right now Chloe and Luke are hearing all about Doris.
So that was my week! I am declaring tomorrow a rest and pretending to not be home.

I only mentioned positive things int his post... but I should add that I went to town to go to the bank and get a medicine from the chemist. The bank was closed and had been shut down for three days due to internet problems... and the chemist did not have the medicine! Have a back up. Have a back up to your back up! xxx

ReplyDeleteI’ve had a good week on the home front with lots of cooking! It is my aim to really plump up my pantry and freezer supplies in the first quarter of this year, so to that end, I roasted 2 chickens on Sunday night (I normally just do one)we ate one, and the meat from the other was shredded for the freezer. With the carcasses I made and pressure canned 4 and a half pints of chicken stock.
Later in the week I made a double batch of chilli con carne, half went to the freezer for a future meal.
I was give a heap of jalapeños, they were dehydrated and stored for later use.
I also baked 2 loaves of bread, a batch of banana choc chip muffins, made French toast out of stale bread, some scones (inspired by your post) and some carrot bite protein balls.
Our 16 year old son is in to fitness and he found workout gym equipment for free on marketplace. So hubby and I drove about 45mins away to get it for him. He loves it and you wouldn’t believe it, but I’ve worked out on it 4 times this week too! 💪
I also got to do a bit of sewing this week, making “double sided” cleaning cloths from old flannelette sheets. Some of them will be the first items of the year to go into my gift cupboard, as my work colleague just loves them (I had given her a few last year) she mentioned recently that she wished she had more, so she will get more for her birthday in May 😉
That sums up my week of getting ahead and being prepared.
Enjoy your rest day, however I suspect you will be doing far more than just sitting on your derrière and resting 😉

We had the same sort of weather as you had this past week. First very heavy rain the sleet and then snow, back to sleet, high winds and freezing temperatures. Then the next day it went up to 50 degrees F and the streets in town were flooded. We're supposed to get more of the same starting tonight with wind gusts of 50 miles per hour and it's supposed to continue until Saturday night, a breather on Sunday and more snow predicted for Monday, Tuesday, and next weekend. We are blessed to be prepared and don't have to make a quick run to the store for any supplies. Serandipitously our whole house generator was serviced on Wednesday and a sticking spring was found and replaced on the spot so all is good there.
Nest feathering included make a large batch of chicken caccitore where we had some for dinner that night and 2 more meals went into the freezer. 3 ingredient peanut butter cookies got baked, I made gift boxes to have on hand, I took out odds and ends of fabrics that were leftover from other projects and cut them potholder and hot mat sizes and they're ready to go. My goal this year is to learn how to use all of the features my sewing machine has and what I can do. It has many decorative stitches and features including a built in alphabet that I can monogram or write full names or sentences with. I've gathered my supplies to start making valentine cards, using what I have on hand. I made a batch of paper rose embellishments to decorate them, as well as die cutting paper lace. I am also using up smaller fabrics bits on pot holders... I want to make some ;anger pot holders to be casserole size for the benches. I have been watching some you tube tutorials.

Your apricots and peaches look delicious and your jam and stewed fruit has to be so delicious and your pantry full of beautiful jars.
We had a slow quiet week here, husband only went and stopped into grocery store after getting his glasses fixed. If he drives by our grocery store he tries to stop in and check for markdowns. He found some great meat mark downs, they went straight into the freezer as we are trying to eat the older items in freezer.
To add to the house but not spend money I am using what I have in my craft pantry. I had one afghan I started last year, I made big mistakes and got frustrated and left it, well finally got it out and am tearing it apart to repurpose. Lots of work as there are sewing tread mixed in with yarn and trying to find it and tear it out is work. But I feel good that I am doing it and it will be a good addition to my living room when done.

We add either black or red canned beans, the corn, green peppers and chili powder and cumin to the rice, and onions. I agree the longer it sits the better it tastes. Very versatile salad. Great for family gatherings or when it's too hot to cook, and here in Arizona it gets hot. Have a good week everyone

Ages ago, our military had a motto: Two is one and one is none. Recently, I have seen preparedness minded folk using that motto. It is very true, two of the same is necessary because when one is lost, used up or quits working, you still have one. I applied this principle last weekend when our stainless steel electric coffee pot died. I simply took the identical backup out of the cabinet and there was no delay in fresh coffee for our guests. Now, I need to replace the one I used, so I am back up to two.
I have noticed that minimalists are definitely not preparing for any difficult times ahead. I totally agree with eliminating unused items that will never be used and most of us have those things. However, now is not the time, in my opinion, to keep four plates, four forks, four spoons, one blanket per bed and only one can of each type of vegetable. I have watched such elimination, within households. The people will never survive without going to the grocery store or ordering their groceries weekly.
Items that serve multiple uses are wise to have as backups, also. This is particularly nice for limited space and prudent spending.
This weekend, in Wyoming, we will wake up to -29 on Saturday morning. We usually get a week, during winter, that gets frigidly cold, then it warms back up into the 30's.

DeleteI have heard that motto too! I think it is good! It was Laine who got me started in saving spare appliances. A lot of people have no spare anything, even towels or linen. To me that is truly frightening. The days of 1. having the money to run to the shops for more and 2. there being more at the shops may not always be here.
Yes multi use things are very advantageous! That is a good subject in itself!

When I don't have fresh basil I take a thawed box of frozen spinach or a bag of fresh spinach, a tablespoon or more of dried basil plus the rest of the pesto ingredients and mix it in my food processor. Tastes pretty good and way, way cheaper than those little jars of pesto they sell here.

DeleteStorms seem to be everywhere! It was a scary day here on Tuesday and now we have it coming again later on today. I am so glad Molly was found safe! Children seem to know when they need to eat up on good for them foods so it is nice that Tom had all that fresh food to eat as much as he wanted and all of you could enjoy the bounty!
ReplyDeleteWe had a great shop at the salvage grocery store. We are really trying to eat down some supplies here but there were gaps and most everything we needed we found for great prices. We found our favorite coffee beans and bought ten full pounds for $36. I have never seen this brand on sale so this was a huge blessing for our pantry.
I will be vacuum sealing all of them in half gallon jars today. We also found gluten free breads for 1.49 a package for when out GF son visits in a few weeks. Then there were sausage links for .79 a pkg which I saw at the regular grocery later for $4 a pkg. We are so blessed to have these stores here.

Those sudden storms are the worst! We had one two nights ago. Heavy rains and wind and several tornadoes that did damage but never touched down! Still rainy and dreary! Usually we have Sun! I’m glad you’re all ok and the water tank is full! Poor Molly! Thankfully she found shelter!!

Donna got the flu but not covid! Been kind of sluggish with dreary after Christmas let down! Antibiotics make you drowsy anyway! This post should make her pep up!!
My wife, Linda, turns big roast of beef into delicious beef and noodles. Then also beef vegetable soup! Great weather for soups! Last night we put the left overs of each to make Vegetable beef and noodles! Yummy!! Finished with peach jello with diced peaches. I use sugar free jello and the juice from the peaches for the cold water part. Delicious and low cal, too.
Have to mention I got a “Kindle unlimited” subscription for Christmas! I’m reading 3 books at once!
Have to go as my youngest is bring her laundry and Starbucks to use our machine! We’ll eat some of our Betty’s shortbread biscuits from Christmas! Yum!! Did anyone see that Betty’s has brought back their iced ginger loaf cake? Our favorite! Have to have one! Luckily, my birthday is next month! Mmmmm!!!

Poor Molly what a fright you all got. The reunion on the veranda shows her joy and relief at Mum coming to find her.
I love the cakes your mum made they look like delicious bites of delight. The scones would be so good with the apricot jam, one of my favourites.
We do not have a veggie garden at the moment. I didn't plant one in spring as we were supposed to have been moved out for five to six months for earthquake repairs. This has been delayed until March/April because our neighbours insurance company is still to settle with him.
To make it more manageable I am aerating the soil, wetting it, sprinkling down lime and covering with cardboard boxes and then putting old leaves,cuttings,etc on top. This will stop the weeds growing and build up the soil while we are out of the house in a no dig style garden. The lime helps the decomposition of the cardboard.
The little bottles and spoons are lovely and will look great filled with herbs for gifts.
Bless Tom and his love for Doris, he is so sweet. I am sure Doris returns the affection, especially when it comes with apples.
I have thought of you ladies on here and your gift making during the week as I have seen some lovely ideas in a magazine I got from the library. One is called junk diaries. If you do a search on Pinterest or google you will see what they are. Basically though, they are little books covered and filled with lovely pictures,lace, diamantes,etc. they look absolutely gorgeous. In the same magazine they also showed how to make fabric pumpkins. Another idea I read in a previous magazine was waxed roses. It is a way to preserve the rose using warm, melted wax candles and water. Again you can see this on Pinterest or google.
Well after a wonderful 3 week Christmas break I return to work this Monday. Yesterday I spent the afternoon getting the house spick and span for the week and before the temperature goes over 30C. Hot for NZ but not for Australia I know.
I love the tea towels you made. The lemons are so vibrant.

DeleteAnnabel I didnt have a cup of tea when I sat down to read your post this morning, but I did have two pink marshmallows that 7yr old Tilly shared with me. They just about got me through. I think Tom is well named and displays so many of his namesakes characteristics. I can just see him planning to get Doris home to his house.
ReplyDeleteThis week has been all about making memories with the Grandies. Spencer adores the girls and has been around to visit here, and they have been around to visit him. It is all outside play with paddle pools, sprinklers, outside toys and backyard playgrounds.
The parents watch the littles whilst Bluey and I make sure all the bellies are full of homemade goodies. My sourdough starter plumps up the pancakes, muffins and scones. These, along with Grandfathers homemade hash browns, are gobbled down by the littles and their parents.
I am sitting here exhausted after this mornings visit. I have my Christmas present, my robot vacuum cleaner, aka Regie Roomba running. He does a marvelous job and I can sit and just let him do the job of picking up the dog hair, beach sand, grass and general bits that get walked in and out.
I have bananas that need using up. I plan on making some choconana muffins later this afternoon. I think I will get the little girls to help with this. Katie, Jared and the little boys will be over to say goodbye to the girls and Francis tomorrow afternoon. We can have home made choconana muffins for afternoon tea. If we make a double batch, Katie can take some home with her. It sounds like a plan.

Annabel happy belated birthday to you and such lovely practical presents you got which I know you will use. Lovely that you were able to process all the free peaches, apricots and lemons into lovely jams, fresh eating and stewed. Your salad and scones look wonderful too. Bless Tom he has it all sorted out about how he can have Doris the cow at his home and yes little active boys can eat quite a bit and 5 apricots in one go is a good effort. Like you I love standing there and watching the water going into our rainwater tanks.
ReplyDeleteWe have had rain on and off with some good showers and I am pleased to say the top tanks are now full and the bottom empty 5000 gallon one is now about half full so hopefully with a few more good storms we will have our full water storage back again. I am glad you got no damage with the mini tornado but feel sorry for the locals in your area that did. Good that the rain came to put out the lightning strike fire as well as grass fires can take off in no time burning so much.
In the kitchen we cooked all meals and 4 loaves of wholemeal white bread in the bread machine saving $13.88 over buying them locally in stores.
In the home we washed down all the walls, doors and skirting and part of the ceiling that was dirty in there too. I did the lower portions and DH the higher parts of the wall and ceilings as he is taller. We also went through the home and cut down any unneeded cardboard boxes that came from deliveries over time and put them in the recycling bin along with any other recyclables.
In the gardens DH pruned one of the star jasmine shrubs with the hedge trimmer and I raked it all up and put it in the bin ready to collect on Tuesday.
I purchased 9 metres of shelf liner for the top kitchen cabinets to stop them getting so dusty. Paid $23.56 from eBay saving $12.44 over buying them in our local stores here. We purchased staple groceries this week for $80.55 and we are under our grocery budget for the fortnight by $40.62. DH and I are working on getting our grocery spend lower if possible as it has doubled dare I say it since September 2022 so I am always on the lookout for any bargains, specials, markdowns, clearances on grocery items we use to lower costs where we can.

Annabel thank you and was meant to put the sewing/craft room in as the one we cleaned all the walls down in. The home is looking much cleaner and tidier and it gives us a chance to declutter as well which is good. I only have the kitchen walls to clean upstairs now and then the rumpus room and laundry downstairs and will be done for another year apart from spot cleaning.
DeleteReally hoping we get the rain that is forecast and we love hearing the top tanks overflowing and the excess water going down the pipe into the back tank. I can watch the water going in the top tanks from a window near the kitchen. Something about us country people we are excited by seeing any water going into our tanks as we so rely on it.

Dear Annabel, Happy Birthday. Your week sounds very eventful. This is the first time since Christmas that I have been able to post a comment as we have been having terrible internet and telephone trouble. We have 11 days to go before we move out temporarily as our house is re-stumped - this has kept me very busy packing things away. I have used the opportunity to have a deep clean/sort. It has been slow work but I am pleased with what I have achieved so far. Love Clare

ReplyDeleteI am in the SW of WA and today we had a high of 38* so after a doggy walk early this morning we have been hibernating. Another week of hot weather ahead but I can always find something to occupy myself in the home.

Happy birthday Annabel! What lovely gifts. I love the look of the cakes with jelly! That must have been scary with Molly taking off, I’m so pleased you found her and know for next time. Those little jars are really cute with the scoops. They’ll be lovely with herbs in them.
ReplyDeleteWe had a birthday this week too, my eldest turned 16. I had fun with his cake, I basically put a variety of chocolates on top, crumbled a Flake bar over the top and sprinkled it with gold stars. Too easy!!
I found some pyjamas on clearance reduced by another 50%. So my sons who were really lacking are now stocked up lol.
We bought school shoes which was quite an expense but could at least use a buy one get one half price deal. So on four pairs we saved around $100.
We love pasta salad but I never think to make rice salad so I’m going to use your recipe as it looks great.

Happy birthday - so glad to read that you had a lovely time with the family. Thanks goodness the rain came up and eliminated to threat of a fire - very frightening. Canada had a terrible time with forest fires this past Summer and even here, thousands of miles away, we were affected by the smoke!
ReplyDeleteNow we are dealing with freezing cold and snow - typical for January but I have to admit that I'm out of practice as Winter has been very mild so far - with no snow. I don't mind wearing my parka but hate having to wear boots!
I ended up working from home all last week due to Winter storms and illness at the office so that saved me nearly two hours commuting time each day, plus transit fares - I only work 25 hours per week and only go into the office for 3 mornings and do the rest of my hours at home anyway but having that extra time allowed me to get a lot of work done in my small apt. I've been wanting to reorganize and clean my dining room and kitchen - cleared out a few things, moved others to where it makes more sense, and gave everything a good clean! The next two days I will work on the dining and living rooms. All the reorganization was done by repurposing containers that I already had on hand - no need to purchase anything new.
I also managed to get 3 loads of laundry done and did a small grocery shop for milk, bread, fruit & veg. Still keeping well within my very small grocery budget for this month as I try to follow the Three Rivers Pantry challenge for at least January.
I added a few more "ready meals" to the freezer and also managed to use up a couple of odds and ends that had been hanging around in the freezer a bit too long. I hope to do a bit of baking before heading back into the office on Tuesday.

Now that all but one final figure is in (it will definitely go lower not higher) I was able to do a rather comprehensive budget for 2024. I like to run a zero balance budget in which I account for all the funds including the miscellaneous category for unexpected needs/expenses. We should manage all right in the year ahead.
ReplyDeleteWe got the heat pump fixed last week and were grateful for our choosing years ago to add a ventless propane heater to the house as a back up source of heat. Now we are looking at getting some fans that we can run with batteries in case of outages in mid-summer when it can be unpleasantly hot.
I did a full freezer inventory and was delighted to find things that I didn't remember having. This meant I could make a huge tray of lasagna. We ate off that today and then I placed 3 meals worth in the freezer for future meals.
I managed to stick to my pantry freezer challenge for fourteen full days now and plan to continue for the remainder of the month. We went into the grocery yesterday to pick up a few sales items to go into the pantry (NOT to be used this month) and some produce, dairy, eggs for right now use to piece out other things. Because I had done my homework (literally) I knew just what we had on hand and what we could use in the two weeks ahead. I also looked at the calendar and noted that the next pay period for us is five weeks from our last pay period (this past week). This makes me mindful that I need to stretch our cash on hand as far as possible, and that grocery budget as well. I got a lot of things accomplished outdoors and indoors both this week, so it was a busy productive week in many ways. This makes me happy. I like looking back and seeing what I accomplished!

ReplyDeleteWe are out of school for the 2nd day because of snow. We got about 6 inches of snow, followed by freezing rain and low temperatures that basically made it all a sold sheet of ice. Here in northeast Tennessee we usually have very mild winters and we're a little out of practice for this weather. My daughter was headed back to college this week, and we sent her back a day early so she'd be there safe and warm when the storm hit. I was worried about the chickens but they have been okay. I've been filling their waterers with heated water every few hours because it freezes so quickly. The last few nights have been single digits temperatures, but will be falling to -9 later this week so I've ordered some plastic sheeting to surround their enclosed run. Hopefully that will at least give them a break from any wind and maybe hold in some warmth. They're still giving us a few eggs each day, which is a blessing.
Thankfully we have plenty of food in the freezers to get us through. We took a quick walk through the store to get a few fill-ins and some things for variety. I have a teenage son at home and my days are generally spent cooking for him. As soon as we've finished cleaning up one meal, he's ready for the next round. A few minutes ago I made him freshly gathered scrambled eggs with 4 huge chocolate-chip pancakes. That should buy me an hour or two of reading time, hopefully. He's a very active boy so missing sports for all these days has made him twitchy. We are supposed to get another round of winter weather on Friday with possibly another 1-3 inches of snow.
Last night we had a major plumbing scare. There was backed up water in the basement (maybe because of the freeze, or it might have been a clog? We're not sure.) Thankfully my husband is a quick thinker, and he was able to cap off one of the suspicious pipes. It worked, and no more leaking pipes. I was worried that we'd have the expense of a plumber, plus no running water during these days we're home! Happily, he was able to fix it and so now I have the dishwasher and washing machines running. I always think of you when I keep the "handmaidens" busy.
I've been decluttering in my down time, and have listed several things for sale on various sites. I've been pleasantly surprised that many items sold. I'm not making a fortune, but it's nice to have things gone, plus have a little extra money toward other things. I use the money to buy makeup, books, or other things that I want. My goal is to list at least one thing per day.
I'm also learning how to knit! Thankful for Youtube videos because I am not good at all. I plan to knit some dishcloths for myself and for gifts. Those flannel cloths sound good, too, might need to learn how to do that as well.
