Feather your Nest Friday, 16th December, 2022.

I am posting late at night because we had a beautiful party to go to.  I had such a nice time!  After being out it takes me ages to settle down and ever be able to go to sleep.   I am in bed with a cup of tea and happy to look back over the week. 

As we get closer to Christmas I have been making extra treats to gift and share.   I made Coconut Ice which I make every year.  


The pink velvet ribbon was an op shop find and the pink roses were from my friend Wendy.  I dried them ready.   It is delicious too!    I got nine generous pieces wrapped to give and various odds and ends for us.

The recipe for this is here.   With the price of butter being so high this is a sweet treat with no butter at all.


I also made Honey Gingerbread.  I made this with gluten free flour and it turned out just as well.   We really love this.   I gave a tin full to Mum.


This recipe is very easy and it rolls out to cut into shapes so well.   You can find the recipe here.


My cows came up to the fence and got their biscuits.   Not the homemade ones though! 


I am studying their bellies.   Laffie definitely is pregnant.   She has a pretty good side bulge going on.


I will be so excited when they start calving!  Maybe we will get a set of twins?
 
Early in the week I had a day trip away and skipped a day collecting the eggs.  It is cool weather so it doesn't matter too much.    When I went to collect the eggs the next afternoon there were 72!  This is an all time record.   I can tell you 72 eggs are a heavy load!!


I might be far enough ahead on eggs to freeze dry some!

I made a lovely rice salad.  Also I cooked a ham.  Because it's Christmas time hams are a good deal.   I baked a ham and we got several meals from it and many lunches.   Plus still going.... by the end I might chop some up and make a Quiche....    or...  a Zucchini slice as I also have a heap of Zucchinis getting close to ready.  

My garden is going quite well with so many seedlings up.  I have been saying this for several weeks but each week there have been more.  It has not been hot so I have been able to keep them coming on.  If this all continues I am going to have a lot to harvest.

I bought myself a Christmas present.   It is a print but the artist has added hand painting to each print.  She is a local lady very close to here and the flowers are local gums.   So to me it is a perfect picture to have in our home.   I saw it and just loved it.   It is just so true of the bush here.


It really feels like Christmas.   A Christmas party added to this and on the way home some of the farmhouses had lights.   We watched a stunning sunset and drank moscato overlooking beautiful vineyards.  It was hard to take haha!

  1. Could someone tell me what a "slice" is? Does it compare to any pastry found in the US? I googled it once and didn't get a very satisfactory response.

    1. Hi Carole, A slice is usually a cake or biscuit (cookie) texture that cuts neatly into bars of squares. No pastry usually. A slice is handy as it is quicker to make and bakes all at once. I hope this helps! xxx

    3. But when it comes to a zucchini or other savoury slice... The simplest way I could describe it to an American, is it would be a sheet pan quiche! 😁

  2. Hi Annabel and everyone,

    That coconut ice is so pretty and the gingerbread - what a nice treat! The painting is also gorgeous.

    These past couple of weeks I've done the usual things amid the doctor's visits (housecleaning, laundry, fridge & pantry organization, a big cook-up with spaghetti sauce and chicken and veggie stirfry). One small extra project was breaking down the rest of the cardboard boxes in the garage and getting them out of there - success! This week, I had a cross-stitching ornament finishing session using my fabric, ribbon, and sticky board stash - eleven new ornaments fully finished and part of our holiday cheer.

    We got some wonderful news for Christmas! My husband's remaining cancer has shrunk by 26% after 4 cycles and the tumor marker in his bloodwork has decreased by more than half what it started out as. You know that it is good news when the oncologist and nurses come into your room with big smiles! This news was so welcome and we are thankful. He is also feeling better in spirit and feels the counselor is a good fit, so more good news there. We so appreciate everyone who is praying for him.

    1. Dear Kathy, You had wonderful Christmas news! And also the counsellor being a good fit is excellent. As they get to know each other more this will develop too. This gives your husband someone he can say anything to. I don't mean this in a negative way re you and the family... it is like having a non emotionally involved person that he can say whatever too and the person wont be upset or take it personally. This is a really good thing.
      You did so well with extra Jos and beautiful cooking! Making eleven ornaments must have been lovely too!

  3. How lovely to have a party to! go to and enjoy! I can't settle down after being out either! That is a treasure to have so many eggs. They are very expensive here.

    We grocery shopped and got some great deals. Chicken breast was 1.99# and I had a $20 off any amount coupon so free chicken breast went into the canner. I have baked two pans of bar cookies and put them into the freezer as well as other food prep for the family to be home. We are so excited to see them all.

    In your coconut ice, is the condensed milk sweetened condensed milk or what we call evaporated milk?

    1. Dear Glenda, It is sweetened condensed milk. We have evaporated milk also but that isn't suitable for the. I would be over with twins but I think I have 8 pregnant cows... this is so exciting and we still have five cows that are running around the larger area of the farm and hiding in scrub to eventually bring in with these cows. The day we get those I will celebrate. There are two bulls on the property belonging to Johnnie (who leases some land) so those cows are probably pregnant as well! I might have quite an increase!

  5. Lovely week Annabelle. I am going to try your gingerbread biscuits. We had our annual street Christmas party last night. It was in one of the neighbour’s yards. It was absolutely freezing and blowing a gale. Despite this it was lovely to catch up with everyone. But roll on summer!

  6. Dear Annabel, I love the picture of your coconut ice, it’s is so pretty and I love how you present it so beautifully. I would love to try and make these biscuits, they sound delicious. Your Christmas party sounds wonderful. I can just imagine how pretty it was to look out at dusk. I can’t wait to see the calves when they are born. I am very happy to say that it’s now school holidays and it’s so much fun crafting, baking and not being on a schedule. I’m thanking God! The prices are huge at the shops, so this will be part of my goal in the next week to use up what we have in our fridge/freezer before Christmas Day, plus then the fridge gets a clear out.     The coconut ice is so pretty with the roses. I was wondering if the dessicated coconut that you use is sweetened or unsweetened. I have lots of unsweetened here as I make my own coconut milk. Very exciting that you will be having calfs soon. I do hope there are twins.
    It has been cold here with rain and ice storms, but today the sun is supposed to shine. Our 20 year old furnace we found out is on its last leg and we need a new furnace. It will be installed next Thursday. Not an expense we were expecting this year but with supply chain issues we feel blessed that one is available to us. I have been busy finishing up some Christmas gifts and baking. All the cards are in the mail, the venetian blinds and windows have all been washed as have the walls in the kitchen. So glad those jobs are done. I'm looking forward to your new series. Both of my Nanas were from Eastern Europe (Lithuania and Belarus) and were "snout to tail" cooks. Nothing was wasted.   9. So lovely! I always give out fudge for Christmas. I will try your Coconut Ice on my family this year. These past weeks, I've used Mimi's menu pages. So helpful!

    I had a goal of using up food scraps this year. I have made many bottles of fruit vinegar: pineapple, strawberry, and banana. Also sprouting lettuce and greens from veg tops and ends. See Mary's Nest for the how tos. And the recipe booklet from Ikea was so helpful....thanks for sharing! Leftovers got used in stirfrys and soups. Every little bit! God is good! He sent this info my way as I needed it. I know it has helped with grocery costs and my husband's confidence in me.

  10. Such beautiful pictures, Annabel! And what exciting news about Laffie!

    We spent the week cleaning up all of our frugal fails (described last week) and getting ready to leave for our son's home this morning. It is a 525-mile trip each way. Then we discovered that our daughter, who could speak last night, had lost her voice and could only whisper! We canceled the trip (for now--might go in two weeks or they might come see us). I took our daughter to a walk-in clinic where she tested positive for A-influenza. Yes, she had the flu shot--we all did. This girl (well, she's 46, and has developmental disabilities) has hardly been sick a day in her in her life. Except for the laryngitis, she isn't having many flu symptoms except for extreme tiredness. She's been in bed all day. The doc prescribed Tamiflu, since we caught it early, and thinks she will be feeling a lot better before the prescription is finished in 5 days. Please keep your fingers crossed that my husband and I don't catch it--we are 76 and 78 years old and this would not be good.

    Once again I was very glad for the frozen ready meals. I had a quart of frozen chicken stock, with lots of meat bits, and made chicken soup for her.

  11. Merry Christmas Annabel and Bluebirds

    I think this will be my last post before Christmas as we will be on the road in a few days time, arriving on Friday with my feet hitting the ground and running.

    Annabel I made gingerbread cookies today as well as some playdough for some little ones we gift to. I have enough to do us tomorrow night for our frozen meals and then I will have to grab something easy from the supermarket for the next night.
    Tonight between the showers of rain DD12 an I did a walk around our street to look at some lights, tomorrow is an early breakfast with a friend and her son and DD12 had a friend sleep over the weekend. I bet the farmhouses looked pretty
    I love how your cows love their biscuits and how healthy they look.

    You sure did get a haul of eggs in that basket.
    We have had afternoon showers and thunderstorms since last
    Thursday which have been lovely but it just makes it humid at night once they clear and really hot the next day.

    Well I do hope that you and your family all have a wonderful Christmas and that Santa is very good to all the Grandchildren

  13. Hello Annabel, hello Laffie - I just love a gentle cow and big velvety nose! You are so lucky to be surrounded by all these creatures!

    We are well in winter now, temperatures are bellow freezing point even during some days, but my chickens are very happy and active. In order to keep boredom away I put inside their run a few of the buckets and boxes I used to grow vegetables in them and let weed and grass so the ladies are having a party every few days when I add some new boxes inside and sprinkle some grains to make them work for their food.
    It is a pleasure watching them climb up and slide down...

    I managed to finish the blanket for the baby girl and delivered in time for her arrival in this world - I was happy how it turned out, - posted some pictures on Instagram, too. I have one more cardigan to deliver and I am done for this year.

    On Saturday we went shopping and were able to buy quite a few things for the pantry so we are good for a while - what I have noticed were the great number of Ukrainian people in the supermarket (Lidl especially). Almost everywhere you could hear Ukrainian language. And today The President of The European Parliament announced on an official visit in our country that Romania and the rest of Europe have to prepare to take in more refugees from the war zone during winter. So...

    A few more days till Christmas - my favorite holiday!

    But until the 24th of December we remember the Romanian Revolution from 1989 when the communism period ended after 42 years of terrible times of fear, hunger and crimes. Not without casualties - more than 1104 young people, mostly students died and more than 3300 people were injured in just one week - Ceausescu and his wife were captured when they tried to escape, they were judged by a Military Tribunal, accused of genocide and abuse of power, sentenced to death and immediately executed on Christmas day - and filmed their shooting on national television. It was a very scary period of time until 29 of December when many of the Securitate members turned themselves in (it was the secret police that took away people in the middle of the night or from the work place and throw them in jail just for a joke against the leading power - many died in jails even in the late 1980s) We had a jail in my town where very important personalities were killed, like priests, teachers, bankers, Religion/going to church was forbiden then - now it is the Sighet Memorial Museum, part of the Memorial of the Victims of Communism. And sad terrible things are shown we did not know about even we lived in town.

    It was a very special Christmas for us! I was 14 years old and happy to be free, happy to speak English (you had to speak mostly Russian to be appreciated), happy to watch American movies and good music. Freedom is a very special treasure and not to be taken for granted!

    Sorry for writing so much - I guess I was swept away by memories.

I am sure that this makes each year's Christmas celebrations very special for your entire country. I love what you have done for your chickens! Something to scratch and keep them occupied is very good. The cold must be miserable but chickens are so naturally happy and some feed, some scraps or greens and it is much better for them.

  15. Hi Annabel, loved your post and that adorable cow! 72 eggs is quite impressive! I thought you'd like to know that here in our local grocery store (Tennessee, US) the price of eggs has been quite high. I'm used to buying 18 Eggland's Best eggs for around $3.50. The past few weeks it's been over $7 for the same amount -- even more if you choose cage free or organic. So you got quite a gold mine there!
